Ribbet collageThis holiday season we will be sharing some holiday tips from some of our favorite local professionals.  This week we here from Kristine Ricci owner of Manicotti’s Catering Company about holiday cookies.  If you haven’t tried some of her cookies, they are absolutely delicious!  Follow these tips and your treats may come out just as good:

The holiday season has arrived!  Who doesn’t love this time of year when it becomes acceptable to stuff your face with Santa’s favorite snacks?  Manicotti’s Catering Company will be busy this month with our signature cut out cookies.  The best thing about cut out cookies are you can make them in varying shapes and sizes, and decorate them to reflect the festive season.

Here are a few tips that will make the big man in red leave extra presents for the kiddos!

{1} Working with chilled dough is important.  Wrap dough in plastic wrap and place in the refrigerator for at least two hours or overnight before getting started.

{2} When you’re “ready to roll”, place your dough between two sheets of parchment paper.  This makes it easy to handle and avoids sticking to the rolling pin and work surface.

{3} Dip your cutters in flour before cutting out each shape to avoid dough from sticking.

{4} Line your cookie sheet with parchment paper for easy removal.

{5} After baking, place your pan on a wire rack to allow the cookies to cool completely before frosting.
